After the hike, you will explore koji, the essential element of Japanese fermentation, and observe traditional miso-making.
You will also take part in a hands-on mochi-pounding experience.
This program offers a complete journey connecting nature, fermentation, and food culture.
Koji is an essential part of Japanese food culture, forming the foundation of miso, soy sauce, sake, and many other traditional foods.
Mochi, on the other hand, is not just food—it has long been used as an offering to the gods. Even today, there is a tradition of offering mochi before it is eaten, reflecting a deep sense of gratitude toward nature.
In this region, people have long lived in close connection with nature, where food and daily life are deeply rooted in appreciation for the natural world.
By visiting the waterfall and shrine, you will experience this connection firsthand. Finally, by eating the mochi, you gain a deeper understanding of its cultural and spiritual meaning.
Your guide for this experience is Tadashi Shoka, a fifth-generation koji artisan from a long-established local brewery.
Born into a family that has supported the region's fermentation culture for generations, he continues to carry on traditional methods while sharing their relevance in today's world.
Through his perspective, you will gain not only knowledge, but also a deeper understanding of a way of life shaped by nature.
